Sunshine Ricotta Bowls with Granola

Brighten up your winter morning with these colorful ricotta bowls. The saltiness of the ricotta is a nice change of pace from yogurt—but feel free to swap it for a whole-milk yogurt if you prefer. The granola adds a nice crunch and flavor but can be replaced with a handful of roughly chopped nuts and seeds if you don’t have a batch on hand.
YIELD: 2 servings | PREP TIME: 5 minutes | COOK TIME: 0 minutes
- 1 cup whole-milk ricotta cheese
- ½ teaspoon citrus zest
- 1 tablespoon extra-virgin olive oil
- 3 to 4 drops liquid stevia
- ¼ cup citrus segments, from oranges, grapefruit, or blood orange
- ¼ cup Nut and Seed Granola with Olive Oil (Keto Bowls, page 13)
1. In a medium bowl, combine the ricotta, citrus zest, olive oil, and stevia. Divide between two serving bowls.
2. Top each bowl with a few citrus segments and 2 tablespoons of the granola.
